What Is Katemfe Fruit Extract?

Katemfe fruit extract (also known as Thaumatococcus daniellii extract) is derived from the fruit of the Thaumatococcus daniellii plant, native to West Africa. It is known for its intensely sweet properties due to the presence of natural proteins called thaumatins.

Key Features of Katemfe Fruit Extract:

Natural Sweetener – Thaumatins (I and II) are sweet-tasting proteins found in the fruit, estimated to be 1,600–3,000 times sweeter than sucrose (table sugar) by weight.

Zero-Calorie Sweetness – Unlike sugar, thaumatins provide sweetness without calories, making them attractive for low-calorie and diabetic-friendly products.

Flavor Enhancer – Besides sweetness, it has a unique ability to enhance and modify flavors, often used in the food industry to improve taste profiles.

Slow-Onset Sweetness – The sweetness from thaumatins develops slowly and lingers longer than sugar, sometimes with a slight licorice-like aftertaste.

Uses of Katemfe Fruit Extract:

Food & Beverages – Used in sugar-free products, chewing gum, desserts, and beverages.

Pharmaceuticals – Added to medicines to mask bitter tastes.

Traditional Use – In West Africa, the leaves are used for wrapping food, while the fruit is consumed for its sweetness.
